Main Dish - Hawaiian BBQ Chicken Sliders



INGREDIENTS
  • 1 rotisserie chicken (or 2 cooked chicken breasts), shredded
  • 1¼ cup BBQ sauce
  • 1 (8 ounce) can crushed pineapple, drained but juices reserved
  • ¼ cup diced red pepper
  • 2 tablespoons chopped cilantro, optional
  • 1½ cups shredded Monterey Jack or Colby Jack cheese
  • 1 (12 count) package Hawaiian rolls
  • Glaze:
  • 4 tablespoons butter
  • 1-2 tablespoons reserved pineapple juice
  • ¼ teaspoon garlic powder

INSTRUCTIONS
Preheat oven to 350ยบ. Split slider buns in half; place one half in the bottom of a 11x7-inch or 9x13-inch baking dish.
In a bowl, add chicken and BBQ sauce and stir until combined and coated.
Spread the chicken on top of the Hawaiian rolls and top with pineapple, onions, cilantro, and cheese. Place other half of the rolls on top of chicken.
Mix together glaze and brush over top of rolls. Cover with aluminum foil and bake for 30 minutes or until cheese is melted.
